...but a Great Day!!!
This morning, Joe called to tell me that an old Union Pacific Steam Locomotive has stopped in downtown Houston and is on display just for today and then will head out in the morning. Although Joe really would have rather seen it in motion, we decided to go see it this afternoon after Joe came home from work.
UP 844 Steam Locomotive now is on display in Cheyenne, WY after it was retired in the late '60's. Back in it's glory days, it ran from Houston to Harlingen for many years. Now, tomorrow, after making its way down here it will make the same trip that it used to and then start making it way back to Cheyenne. UP employees and their families are guests on the train while this commemorative trip is made. This train is HUGE! Joe read that it can easily travel at 100 mph! Look how big the wheels are! Joe is 6'1". Those wheels are just about that tall!
We had a great time! I'm glad Joe took us to see it!
...we grilled out and Joe and the kids played soccer. Joe is teaching Grey how to kick the ball using different parts of the foot. The kids had a wonderful time spending time with Joe!
Joleigh found a ladder that is propped on the side of the house. I told her about when I was her age, I climbed a ladder and tried to jump off the last rung and hit my head on a rock. She stepped down and started to point to her head and said "Ouch, ouch!"
Grilled sweet potatoes
Grilled pineapple slices (see above - out of this world!!!!!)
DELICIOUS!!!!!!
Chicken or Pork Chop marinade:
6 Tablespoons Dijon mustard
6 Tablespoons brown sugar
3 Tablespoons unsweetened apple juice (I use unsweetened apple sauce)
3 Tablespoons Worcestershire sauce
Put all ingredients in a zip-lock bag, place chicken in bag. Mix and Chill for 8 hours!
Grill meat and enjoy!
